Green Chiles Chicken Squash Boats

Ingredients

1 kg of low-fat ground chicken

4oz Hatch Green Chile (Light, Canned)

1 cup of wild rice mix and brown

1 tbsp garlic paste

10 cherry tomatoes (cut in half)

1/2 tsp cumin

3 tbsp reduced fat mozzarella (optional)

Fresh cilantro (cut)

Steps

Set the oven to 405F.

Cut the yellow zucchini in half and cut the seeds inside into particles.

Place the adhesive pot on medium to high heat. Add the garlic paste and ground chicken, then the cucumber seasoning and cook until the chicken is 70% done. Press the chicken with a wooden spatula so that it is not bound.

Add green chili and cooked rice. Stir together and cook until the chicken is 90% done.

Add the squash halves on a parchment paper.

Fill the zucchini with the chicken and chili mixture.

Cut the cherry tomatoes in half and place the meat mixture on top.

Sprinkle with mozzarella cheese, about 1/2 tsp for half of each boat.

Bake for 20 minutes on a boiled but firm pumpkin.
